Tofu and Sweet Potato Chilli

Easy and delicious one pot meal cooked in the slow cooker

  • red onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tin black beans (rinsed)
  • 1 tin kidney beans (rinsed)
  • 1 tin cannellini beans (or other white bean) (rinsed)
  • 1 tin chickpeas (rinsed)
  • 1 tin sweet corn (drained)
  • 2 tins chopped tomatoes
  • 1 block firm tofu (drained and cubed)
  • 4 small sweet potatoes (scrubbed clean and cubed (peeling optional))
  • salt, pepper, chillli powder, oregano, smoked paprika (to taste)
  • 1 bag baby spinach leaves (washed)
  1. Put everything in the slow cooker and stir to combine. Cook on high 5 hours or low 7 hours.

  2. Once cooked, add spinach, stir, and cover until leaves are wilted (a few minutes).

  3. Serve with rice, break, warmed tortillas, or salad
