Chocolate chia pudding
Make a tasty, healthy chocolate pudding in just five minutes. It's low-calorie and vegan, too, and the chia seeds are a great source of omega-3 fatty acids
- 60 grams chia seeds
- 400 ml unsweetened almond, hazelnut, or oat milk
- 3 tbsp cacao powder
- 2 tbsp maple syrup
- 1/2 tsp vanilla extract
- 1 tbsp raw cacao nibs

Put all the ingredients in a large bowl with a generous pinch of sea salt and whisk to combine. Cover and leave to thicken in the fridge for at least 4 hours, or overnight.

Spoon the pudding into four glasses, then top with cacao nibs.

Additional toppings (optional): sliced banana, chopped mango, frozen berries, fresh berries
